Just back from break—and 12 new spots opened while we blinked!

Your locally curated guide to to the best brand-new eats, events, and hidden gems
[Issue #032 | May 26th, 2025]

Good morning, Vegas!
Before we dive in, a moment of gratitude: this Memorial Day, we’re thinking of those who served and sacrificed—and sending love to the families and communities who carry that legacy forward. However you're spending the day, we hope it brings a little peace, connection, and time to recharge.
This week’s issue is stacked—new flavors, new favorites, and more grand openings than we’ve seen in a minute. From early mornings to late-night cravings, the city’s feeding us well. And if you're the type who likes being first on the scene, now’s the time to clear some space on your calendar—and your plate.
🍜 Speakeasy Ramen lab meets European wine bar.
💦 The Go Pool is back—louder, splashier, and thirstier than ever.
🃏 UNO just went bottle service. The Stakes are Raised.
Here’s what’s worth your time this week:

Get it before it’s gone.
Bar Zazu x pastaRAMEN
📍 Until 6.14 @ Resorts World
A European wine bar and a Japanese-Italian speakeasy might sound like strange bedfellows—but this limited-run collab is pure synergy. pastaRAMEN (of East Coast cult fame) brings its “wafu-Italian” magic to the sleek confines of Bar Zazu, offering a chef’s tasting menu that jumps from cacio e uni to carbonara ramen like it’s the most natural thing in the world. You’ll need a reservation and an open mind—but the payoff is a flavor trip that’s bold, balanced, and totally unlike anything else in town.
Nudo Italiano
📍 Southern Highlands
If you live in the southwest and have been craving a non-chain spot for date night, Nudo is your new go-to. The latest concept from the Morton Group (La Cave, CRUSH) brings a rustic-modern vibe and serious culinary chops to a part of town that’s long been overlooked. Expect handmade pastas, wood-fired pizzas, and elevated Italian comfort food that’s equal parts classic and clean. It’s warm, approachable, and already earning regulars—always a good sign.
Carajillo
📍 The Ogden
Downtown just scored a sharp new Mexican kitchen inside The Ogden. Carajillo is still flying a little under the radar, but the food speaks loudly: housemade tortillas, grilled octopus, bone-in short rib birria, and cocktails that know exactly what they’re doing. The vibe is upscale without being fussy, making it a strong play for pre-show dinners, weekday date nights, or anyone who wants to dodge the Fremont chaos without ditching the downtown energy.
Couve Specialty Coffee
📍 The Grammercy
Couve is soft-open now, but this isn't some sleepy café. It's got real ambition—and it shows in everything from the sleek branding to the syrup selection (house-made, if you’re wondering). Expect well-pulled espresso, a thoughtful food menu, and a crowd that’s already treating it like a second home. Bonus: their official Grand Opening is June 1, with treats for the first 100 guests. But if you're the type who prefers to beat the lines and soak in a vibe before it hits peak hype—now’s the time to go.
The Coffee Class
📍 Summerlin
One of the city’s most respected coffee spots just planted its flag in Summerlin, and it’s not playing it safe. The new Coffee Class builds on the success of its Henderson flagship with expanded food options, curated pour-over flights, and the same ultra-considered design that makes it feel more like a boutique hotel lounge than a café. It’s polished but not precious—and with the extra kitchen space, expect this location to become the new test lab for their next big menu moves.
Effin Egg
📍 Spring Valley
This Florida-based breakfast rebel just crash-landed in Vegas with one mission: blow up your morning routine. Effin Egg is brash, fast, and flavor-forward—serving up egg sandwiches, burritos, and bowls stacked with bacon, cheddar, and enough “effin” attitude to power a hangover recovery. It’s counter service with chef cred, and the branding (bright, cheeky, and a little chaotic) makes it clear: this ain’t your average breakfast spot.
No Butcher
📍 Henderson
Vegas’ favorite vegan deli just opened its second location, and it’s a big deal for the growing plant-based scene in the valley. NoButcher makes meatless magic with its signature sandwiches—pulled “pork”, turkey-free clubs, and cheesy melts so convincing even carnivores do a double take. The Henderson spot keeps the same community-driven spirit as the original, with grab-and-go options, housemade spreads, and staff who treat regulars like family.
Holsteins Burgers and Shakes
📍 5.29 @ Arts District
After 14 years on the Strip, Holsteins is ditching the casino crowd for something cooler: the Arts District. This reboot brings the same stacked burgers and boozy shakes that made it famous—but in a new setting that trades neon for exposed brick and local edge. Expect some menu upgrades, a refreshed cocktail list, and a vibe that’s way more laid-back than its former home inside the Cosmo. Opening day is May 29, and yes, the Gold Standard burger is still on the menu.

Get ready to dive in.
Go Pool
📍 Now Open @ The Flamingo
The Flamingo’s newly remodeled Go Pool has finally opened, unveiling a $20 million tropical oasis in the heart of The Strip. This adults-only dayclub features five pools, a swim-up bar, and live DJs seven days a week. Whether you're looking to dance to headlining acts on weekends or enjoy throwback hits on Thursdays, Go Pool offers a lively atmosphere for sun-soaked fun.
Joseph and the Amazing Technicolor Dreamcoat
📍 5.28 - 6.14 @ Spring Mountain Ranch State Park
Experience the classic musical "Joseph and the Amazing Technicolor Dreamcoat" under the stars at Spring Mountain Ranch State Park. Presented by Super Summer Theatre, this production runs from May 28 through June 14, offering a unique outdoor theater experience amidst the natural beauty of the park.
Jim Gaffigan
📍5.28 - 5.31 @ ENCORE Theater
Comedian Jim Gaffigan returns to Las Vegas with his "Everything is Wonderful!" tour, performing four nights at the Encore Theater. Known for his witty observations and family-friendly humor, Gaffigan's shows are a must-see for comedy enthusiasts.
UnCommons Unwind
📍 5.27 @ UnCommons
Join UnCommons for their "Unwind" series every Tuesday in May. On May 27, enjoy a free mat Pilates class at 6 PM on the rooftop of Parking Structure 1, led by @thegoodplacelv. It's a perfect way to relax and rejuvenate midweek.

Top Gun Experience
📍 The Strat
The Strip is getting a dogfight—and no, it’s not another nightclub turf war. A full-blown Top Gun Experience is landing at The STRAT, courtesy of Paramount and the team behind FlyOver. Think motion simulators, flight suits, themed cocktails, and a ride that practically begs you to yell “I feel the need...” before blacking out from G-force. It’s slated for 2026, but the buzz has already taken off. If they don’t sell aviators in the gift shop, we riot.
UNO Social Club
📍 Palms Casino Resort
UNO is going bottle service. Mattel (the toy company) is opening its first-ever UNO Social Club inside the Palms—a mashup of restaurant, lounge, and game night on steroids. There’ll be card tables, cocktails, music, and what we can only hope is a strict “no reverse card on the dance floor” policy. Is it brilliant? Bizarre? Both? Either way, it opens late 2025 and we’re watching closely... preferably from a safe, skip-proof distance.
New Shopping Complex
📍 Downtown Summerlin
Downtown Summerlin isn’t just expanding—it’s leveling up. At the center of it all is Municipal Gym, a Mark Wahlberg-backed fitness concept powered by EōS that’s more lifestyle than locker room. We’re talking a full-on wellness hub: juice bars, cafés, activewear, supplements, and recovery zones that go beyond the post-spin smoothie. It’s the kind of spot where you could work out, grab lunch, and shop for protein powder and compression shorts without ever changing zip codes.
And that’s just the start. The new retail roster includes Alo Yoga (finally off-Strip), cult-favorite skincare clinic Skin Laundry, and collectible toy phenomenon Pop Mart, known for its designer “blind boxes” and street-style collabs. BYLT is also bringing its elevated basics to market, alongside high-end furniture house Roche Bobois Paris and a few returning heavyweights like Victoria’s Secret/PINK, fresh off a remodel.
Add in Paris Baguette and The Great Greek, and it’s clear: this isn’t just a shopping center anymore—it’s a full-on lifestyle district that’s pushing westside cool into new territory.

We have eaten at the Yardbirds in Miami Beach and Las Vegas they are phenomenal!! Best chicken and waffles we have ever had, great service and fantastic staff, highly recommend.
My wife and I had been dying to try Best Friend and finally made reservations in advanced. We order lumpia, spicy cucumbers, garlic chicken, kogi tacos and kimchi fried rice and all of it was off the charts amazing! The only problem was we couldn't try everything on the menu in one visit. The good news? We have plenty of reasons to go back!
