From Tapas to Trivia—What’s New, and What Matters

Your locally curated guide to to the best brand-new eats, events, and hidden gems
[Issue #021 | April 14th, 2025]

Good morning, Vegas. Every week, we track new openings. But lately, it’s felt like more than just a list—it’s a wave. Everywhere you look, there’s a new restaurant, bar, or café quietly carving out its corner of the city. And what stands out most isn’t just the food—it’s the people behind it. These aren’t big chains or flashy launches. They’re small teams, often family-run, putting everything they’ve got into something they believe in. It’s a reminder that Las Vegas isn’t just a city of spectacle—it’s a city of builders, dreamers, and people who care deeply about what they create.
🌱 A café where every lunch changes a life
🍽️ A folk-art fantasia of mole and birria
🎉 A live game show where you’re the contestant
Here’s what’s worth your time this week:

Grand Opening of The Blooming Bistro
The Blooming Bistro
📍 Rancho Oakey (Medical District)
Not every new opening comes with a mission—this one does. The Blooming Bistro is a delicious café serving fresh, casual fare while doubling as a job training site for young adults navigating recovery, foster care transition, or other systemic hurdles. Founded by the Steele family and led in the kitchen by Chef Calvin (a Strip veteran with four decades of experience), the bistro offers more than just lunch. Soups, sandwiches, and seasonal specials are prepared by program participants gaining hands-on culinary skills—and, more importantly, a sense of direction. It’s a rare blend of hospitality and healing, served without pretense.
Alebrijes
📍 Neonopolis (Fremont St)
A kaleidoscope of color and comfort, Alebrijes is the new downtown stunner from Chef Paco Cortes (formerly of El Dorado Cantina). Tucked inside Neonopolis, it’s a lively homage to Mexican folklore, with vibrant murals, folkloric flair, and a menu that feels both rooted and refreshing. Mole runs deep, house-made tortillas arrive warm and proud, and dishes like the ribeye birria feel like stories on a plate. It’s thoughtful, joyful cooking—and a welcome splash of soul in a complex better known for chaos.
Fish With You
📍 Shanghai Plaza (Chinatown)
Fish With You, known for its regional suan cai yu (pickled cabbage fish stew), brings a bold, broth-forward menu that leans heavily into heat, tang, and tradition. The signature dish—white fish simmered in a sour, spicy broth—is as punchy as it is comforting, and the sides (think crispy chicken, boiled beef, and preserved veggie add-ons) turn it into a choose-your-own-adventure feast. With over 2,500 locations worldwide, this Vegas debut marks a quietly significant addition to Shanghai Plaza’s growing roster of heavyweight names.
Puradak
📍 Spring Oaks Shopping Center (Chinatown)
One of South Korea’s most recognizable fried chicken chains has popped-up in Las Vegas. Puradak, now open in Chinatown, specializes in a two-step cooking method—oven-fried, then flash-fried to order—that delivers an impressively crisp exterior without sacrificing moisture. The menu spans from soy-garlic and spicy chili to cheese-dusted wings and mochi-wrapped cheese balls, all presented with an unexpectedly sleek aesthetic.
Papa Aldo’s Peruvian Fusion
📍 Regal Plaza (Paradise)
After building a quiet following through catering and delivery, Papa Aldo’s now has a home of its own. The new southeast storefront serves a rotating lineup of Peruvian-style empanadas—savory options like steak, lentil, and ham & cheese, plus sweet versions filled with guava cheesecake or berry compote. It’s a family-run operation with a clear focus: bringing more Peruvian flavor to Vegas, one handheld bite at a time. Simple, soulful, and full of promise.
Dave’s Hot Chicken
📍 South Rainbow (Spring Valley)
The Nashville-style chicken chain continues its Vegas expansion with a new outpost in Spring Valley. Known for its no-frills menu of tenders, sliders, and crinkle-cut fries, Dave’s turns up the heat with spice levels ranging from “No Spice” to “Reaper”—the latter requiring a waiver. I’m not kidding.

Let the games begin!
Great Big Game Show
📍 Forum Shops at Caesars (The Strip)
From the team behind The Escape Game comes a new reason to gather your friends and press a buzzer. The Great Big Game Show is part live theater, part immersive trivia night—where you’re not watching contestants, you are one. Each 60-minute session features a rotating mix of challenges across categories like pop culture, puzzles, and physical games, all hosted by a live emcee in a studio-style setting. It’s interactive, high-energy, and a smart alternative to the usual casino-floor fare.
Dumpling Fest
📍 Wed, April 16th @ 89102
Part food tour, part cultural crawl, Dumpling Fest returns to Las Vegas with a citywide tasting event built around the world’s most beloved comfort food. Hosted by Vancouver Foodster, the experience invites guests to explore a curated lineup of restaurants—each serving up their version of dumpling-inspired bites, from Chinese wontons and Japanese gyoza to Indian samosas and Mexican empanadas. It’s self-guided, ticketed in advance, and built for anyone who prefers to snack with a passport mindset. Less a festival in the park, more a hands-on dining itinerary.
Immortal Technique
📍 Wed, April 16th @ The Usual Place (Downtown)
A rare appearance from one of underground hip-hop’s most uncompromising voices, Immortal Technique hits The Usual Place this week alongside longtime collaborator Poison Pen. Known for his politically charged lyrics and fiercely independent ethos, Technique hasn’t released a full album in years—but his live shows remain raw, intense, and deeply personal. For fans of conscious rap with teeth, this isn’t just a concert—it’s a statement.

Starbucks Reserve – Downtown Summerlin
Construction is underway on what appears to be a Starbucks Reserve café—the upscale offshoot of the coffee giant—just west of Whole Foods in Downtown Summerlin. While Starbucks hasn’t confirmed Reserve branding, renderings and signage suggest a more premium buildout than typical locations.
Swig – South Rainbow
Swig is doubling down on Las Vegas. After a buzzy debut near Silverado Ranch, the Utah-based “dirty soda” chain is prepping a second outpost in Spring Valley, set to open soon near Rainbow and Arby. Known for its customizable drinks—think Diet Coke with coconut cream and lime, or Sprite spiked with mango puree and Tajín—the brand caters to the non-coffee crowd with a playful, highly Instagrammable menu.
Mini Ikea – Henderson
IKEA is going smaller—but smarter—with its new Henderson outpost, a compact 2,900-square-foot “Plan & Order Point” concept opening later this year. Unlike the massive blue-box showroom off the 215, this space is designed for consultations rather than browsing. Customers can meet with design staff, order furniture, and arrange for pickup or delivery—all without weaving through a maze of meatballs and bunk beds. It’s the first of its kind in Nevada, and a sign IKEA is rethinking how it shows up in growing suburban markets like Henderson.
Krok – Chinatown
The team behind Mama Surang is getting ready to debut KROK—a bold new concept blending Thai flavors, Southeast Asian vintage flair, and modern cocktail culture. With its tagline “Thai Food. Socialize. Contemporary,” KROK centers around shareable tapas, authentic rice and noodle dishes, and Thai-inspired cocktails built for both balance and spectacle. Details are still under wraps, but this one already feels like a standout in Vegas’s growing modern-Asian wave.

Foam Wonderland @ Craig Ranch Amphitheater | June 28
What started as a touring foam party has grown into a full-blown EDM spectacle. Foam Wonderland hits Craig Ranch this summer with DJ sets, firework finales, and more suds than sense. It's loud, messy, and unapologetically fun—just bring earplugs and a change of clothes.
Vegas Unstripped @ Palms Casino Resort | April 27
More than 30 of the city’s best chefs and bartenders. One night. No rules. Vegas Unstripped is back with off-menu creations, open bars, and a crowd that knows good food when they taste it. All-inclusive with your ticket, so grab it before they sell out.
The Eagles: Final Sphere Show @ Sphere | Oct 3-Nov 8
The Eagles are extending their Sphere residency one last time, adding eight final shows this fall. Expect the full catalog—"Hotel California," "Desperado," and more—paired with the venue’s signature 360-degree visuals. It’s the last call for a record-setting run.

Came with a Bulgarian friend who introduced me to Beso. Everything was so delicious! I loved how clean yet homey the food felt. I would absolutely come back again and bring friends. The ambiance was beautiful. It was so elegant but cozy inside. All staff members were so nice. Would come again!
Came across this Miznon after walking around and decided to try it! It was amazing! We got the grilled cauliflower and pita with ribeye steak! Wow! The cauliflower was so good paired with the green sauce. Loved that it had a char on it yet very soft! The pita with ribeye was so good and also good paired with the green sauce. The pepper they give you is also good as well, it's spicy so watch out if you can't handle it!
